      The most impressive thing I have done in science is become a scientist! I’m still quite early in my career, and getting through university through the pandemic and my own personal circumstances was really difficult. I am proud of myself for getting to the position I am in, and I hope one day I can best that achievement for something impressive – but there’s nothing wrong with being proud of myself simply for getting here!

      The most impressive thing I have done is complete my PhD at University. My project focused on the science and structure of Ice cream, and looking into if we could reduce some of the fat content to technically make it ‘healthier’ but whilst keeping the same structure and taste. It was such a fascinating project of its time as it was really looking a novel ways we can structure food. What I found really interesting is that the science applied to food is very similar to that applied in cosmetics and Household cleaning products. It was great to work alongside all these different times and share my findings and understand the impact this could have on different projects. I was a very small part of a wide spread project but I loved that I was making a difference and impact on how science in food has moved forward.
